Method
- Pre-heat oven to 180c.
- Line a loaf tin. In a bowl, mash the bananas with a fork, then add in the egg and milk and mix it well.
- Add the oats to a blender/food processor and blend to a flour.
- Add into the bowl along with the self raising flour and cinnamon.
- Mix well until a batter forms. Place the biscoff spread in a small bowl and microwave for 50 seconds, stir it into the batter and mix well.
- Finally, stir in the white chocolate chips, reserving some for the top.
- Empty the batter into the lined loaf tin and top with remaining choc chips.
- Place in the oven for 35 minutes. Once baked, allow to cool and slice into 8 slices.
- Store in an airtight container in the fridge.
- When ready to eat, warm a slice in the microwave for 40-50 seconds, serve with the Greek yogurt, warm up the blueberries & raspberries in the microwave & then mix with the chia seeds to create a compote, add the banana and peanut butter and enjoy!!
