Method

  1. Pre-heat oven to 180c.
  2. Line a loaf tin. In a bowl, mash the bananas with a fork, then add in the egg and milk and mix it well.
  3. Add the oats to a blender/food processor and blend to a flour.
  4. Add into the bowl along with the self raising flour and cinnamon.
  5. Mix well until a batter forms. Place the biscoff spread in a small bowl and microwave for 50 seconds, stir it into the batter and mix well.
  6. Finally, stir in the white chocolate chips, reserving some for the top.
  7. Empty the batter into the lined loaf tin and top with remaining choc chips.
  8. Place in the oven for 35 minutes. Once baked, allow to cool and slice into 8 slices.
  9. Store in an airtight container in the fridge.
  10. When ready to eat, warm a slice in the microwave for 40-50 seconds, serve with the Greek yogurt, warm up the blueberries & raspberries in the microwave & then mix with the chia seeds to create a compote, add the banana and peanut butter and enjoy!!
