Method

  1. Heat the oil in a pan and Pre grill.
  2. Once hot,  add the chopped sausages and fry for a few minutes until golden, next add the onion, red pepper and courgette and fry for 5 minutes until softened.
  3. Now add the balsamic vinegar, tomato paste, garlic paste and Italian herbs.
  4. Fry for 1-2 minutes and add the passata and chicken stock, simmer for 10 minutes.
  5. Add in the gnocchi and simmer for 2-3 more minutes.
  6. Top with the grated parmesan and place under the grill for 6-7 minutes until the cheese is bubbling and golden.
  7. Divide into 4 portions and enjoy.
